Easy + Healthy Dinner: Veggie Fried “Rice”

If you’re life is anything like mine (read: 8 hour work days + up to 3 hours of commuting), you’re always on the hunt for quick and easy things to whip up for dinner. And if you are anything like me, you also want those dinners to be healthy. Recently I’ve taken to sharing the healthy recipes I’ve tried on my Instagram stories, whether my own or from other blogs, and I seem to be getting a positive response. In addition to posting my creations on my Instagram cooking show stories , I’ve decided to carve out a corner on the blog for my favorite healthy recipes.

Last night after an intense workout that had me dripping in buckets of sweat (yum), I was so hungry I easily could have picked up the phone and ordered a pizza. However I didn’t want to ruin all the hard work I had just put in, and I also have a fridge full of food after my weekly Trader Joe’s run. Craving something filling and fresh, I threw together my own rendition of veggie fried “rice”, and it took under 15 minutes to do.

Everything I used for this recipe is from Trader Joe’s, however all the ingredients are pretty basic and can be found at any major grocer. A lot of what I used in the recipe is found in the freezer section, but you could easily sub for fresh. Frozen is just easier for me, as I don’t always use up what I buy in the week, and I hate wasting food. I also love that everything is already prepped for me. Time washing and slicing veggies + ricing cauliflower? None. Oh, and I’m not sponsored by Trader Joe’s, but if they’re willing…Hey Joe!

So let’s get into what you actually came for: the recipe!


3 cloves of garlic, minced

1 teaspoon of olive oil

1 cup Trader Joe’s frozen Harvest Hodgepodge veggie mix

1 cup Trader Joe’s frozen Organic Riced Cauliflower

2 teaspoons of freshly grated ginger

1 tablespoon Trader Joe’s Reduced Sodium Soy Sauce

2 whole scrambled eggs, set aside in bowl


  1. Heat olive oil in medium sauce pan and saute garlic for 1-2 minutes
  2. Add veggie mix and cook until warm + crispy, about 4 minutes
  3. Add riced cauliflower, cook an additional 4-5 minutes, until cooked through
  4. Sprinkle in ginger + soy sauce, mix to combine
  5. Push veggie + cauliflower mixture to side of pan, pour in eggs and scramble
  6. Transfer everything from pan to a bowl, mix together, and enjoy!


You can adjust the amount of ingredients to your liking and appetite. If you want to make this for more than one person, simply double the recipe. Or if you’re just really hungry.

You can add additional proteins (ie: chicken, ground turkey, etc.), however I wanted to keep it meatless (Did I really want to though if I just didn’t have any chicken on hand?)

If you’re not shopping at Trader Joe’s, their Hodgepodge veggie mix includes snap peas, red peppers, water chestnuts, onions, mushrooms, carrots, and broccoli.
